Pan-Roasted Spicy Corn

Pan-Roasted Spicy Corn

 

Here's a great way to take a plain side and spice it up! It's very simple to do, and only a few more steps added complained to making plain corn. 

Ingredients

  • 16 oz bag of frozen Corn
  • 2 Tbsp of Butter
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Ground Cayenne Red Pepper
  • 1 Tbsp Grated Parmesan
  • 1/2 tsp Sugar

 

  1. On medium heat, heat up your pan and melt butter. Add frozen corn.
  2. Saute corn for 10-15 minutes until corn us fully cooked. Stirring occasionally.
  3. Once corn is fully cooked, turn off heat and mix in: Garlic Powder, Onion Powder, Paprika, Chili Powder, Cumin, Ground Cayenne Red Pepper, Sugar, and Grated Parmesan.
  4. Fully mix together, and top with more grated parmesan(optional).

Banana Split Cake

Banana Split Cake

Well it was my birthday the other day so of course I had to make myself a birthday cake!  One of my favorite desserts is a banana split! So I wanted to make a way where I can have those amazing flavors in a cake.  I also wanted to make it super simple so anyone cane make it! I am so happy on the way this cake turned out, its exactly how I hoped it would. Not only does it taste good but it looks so cute, perfect for a birthday!

In this recipe I used Wilton Easy Layer Pan Set but its not necessary to use them.  I liked using them because they are small so I can easily have separate layers of each flavor. If you just want to use a pan you already have, the cake still looks and tastes good when you marble the different flavor batters!

Meal from the Market: Brown Butter Herb Steak and Scallops

It was an exciting weekend in my hometown of Easton, PA.  Our public market finally opened! The Easton Public Market has a collection of vendors providing the community with the freshest meats, seafood, cheese, farm stand produce, etc. The best part is there are vendors providing delicious already made food, so I can eat while I shop.  It is basically our very own indoor farmers market.

So of course I took this opportunity to buy the freshest ingredients to make a fantastic dinner! (If you are reading this and you are not from the Lehigh Valley, PA area you can easily find these ingredients from your local market/grocery store.)  My first stop was 3rd & Ferry's Fish Market where I picked up some beautiful looking scallops. Next I headed over to Dundore & Heister to pick up some steaks because I was craving some surf and turf.  I chose a skirt steak and I could not wait to put it all together! When I was there I also grabbed a sour dough baguette from Scratch and some fresh greens and herbs from the farmstand.

I put my steak and scallops over mixed greens, but if you are looking for a side there are so many different options that you can make from scratch or buy already made.

Pasta-less Primavera

When cooking, a big thing I like to do is think of ways to make my favorite comfort foods into something a bit healthier.  I don't know if this is because I am Italian but anything that is covered in marinara sauce is my comfort food. Since summer is coming, I am trying to cut down on the pastas and carbs.  Problem is I still want a way to eat my marinara sauce, which is usually covering my pasta and pizza. So this blog is my idea on a Pasta-less Primavera. I want to call this post more of an idea over a recipe because it doesn't have very strict directions.  If there is a vegetable you don't like in it, take it out. Or if there is something you wish to add, go for it! I did want to stick with the vegetables that you usually see in a primavera dish, but added some to make it more hearty and filling.

So, what I used

  • Garlic
  • Broccoli
  • Shredded Carrots
  • Red Onion
  • Eggplant
  • Green Zucchini
  • Yellow Zucchini
  • Butternut Squash
  • Red Bell Pepper
  • Spinach/Kale Mix
  • Grape Tomatoes (chopped in half)
  • Basil Leaves

Peanut Butter Chocolate Crisps

I love these cookie crisps things, but I cannot take credit for them! They sort of taste like a peanut butter twix.  I found this recipe in a magazine clipping my stepmom gave me. Unfortunately I do not know what magazine they are from. They are too good not to share with the world though. I haven't seen a recipe similar to this out there, I never would have thought to use butter crackers as a dessert. When making these crisps your kitchen will smell like an old fashion ice cream shop when they are making fresh waffle cones, its amazing.

I know that my past few recipes have included ground turkey, but it's hard not to. Spring and summer are coming so I thought its the perfect time to share some recipes that have healthier choices. If you love red meat but want to cut back, ground turkey is the perfect substitute.

I love this recipe because I LOVE PASTA and MEAT SAUCE! But when I am trying to cut down on my carbs I want it event more. So here's how I crush my craving with out crushing my diet! To be honest 'm not a huge spaghetti squash fan, I would never eat it plain. So I love to load my squash up with this meat sauce! My meat sauce recipe ends up always having leftovers which is okay because you can easily turn it into to some turkey chili!

Turkey Meatloaf

This turkey meatloaf is a great recipe when you are in the mood for some comfort food, but also want to feel like you are being somewhat healthy. Or want your picky eaters to be healthy but not know it. That is what is so great about ground turkey! I love to always substitute in ground turkey in my recipes because you can't even tell that you are using it and so much healthier and less fattening then ground beef.  I made this meatloaf and no one could tell that it was turkey, which is great for the picky eaters because what they don't know won't hurt them.

Make a Cake Look and Taste Like Bakery- Vanilla

I want to share with you ways you can take your favorite box cake and make it look and taste like you got it from a bakery.  Its so simple, anyone can do it (no special tools needed!) And nobody will believe you made it. 

The one thing I did buy is this cake set made by Wilton that gives you 5-6in cake pans. You can buy it at Micheal's, Hobby Lobby, Target etc.  Its only $12 at Michael's and they always have coupons so I think I only bought it for $8.  Let me tell you that was the best $8 I have ever spent.  This pan set is the east fix to make any cake look professional.  I don't know what it is about skinny tall cakes that are so cute, but they are my favorite style.

Another Trick to making it taste like a bakery cake is, instead of water replace it with milk. Then instead of oil replace it with melted butter then make it doubled if you want.  Add vanilla and an extra egg.

My final trick is, icing it super simple to make from scratch so I would make it from scratch.  I usually make it during the time of my cakes cooking and cooling. (Or ahead of time.)

 

What you will need

Cake:

  • Wilton Easy Layers Cake Set
  • You Favorite Vanilla Cake Mix
  • Butter =to the amount of oil on box then optionally double it
  • milk = to the amount of water
  • eggs = to the amount on box plus one extra
  • 1 tsp vanilla

Icing

  • 3 cups Powdered Sugar
  • 2 Sticks of Butter (=1 cup of butter) Room Temperature
  • 1 tsp Vanilla
  • 2 Tbsp Heavy Cream

Extras

  • Food Coloring
  • Sprinkles
  • Zip Lock Bad

I love this recipe because it is so simple to make, yet it taste so amazing. And it smells like your Nonna has been cooking in your kitchen all day! I'll have to admit that even though it is simple to make you still have to put time into it! This lasagna takes about 50 minutes of prepping time and 45 minutes of cooking time.

So I am obsessed with iced coffee, it's literally the only way I drink coffee.  It doesn't matter how cold it is outside, for me iced coffee is a year round drink not just summer.

For years of making iced coffee I have gone through many different methods to make it perfect.  I use to put it in a frozen mug and waited until it chilled, made it over night, and even made the coffee ice cubes.  But all these things require one thing, patience.  When it comes to me and my iced coffee there is not much patience there.  But for years I had to suck it up and either have patience or watered down coffee.  Until last year the idea popped in my head, which is a "why didn't I think of this sooner because it is common sense?" type of idea. A cocktail drink mixer. I guess you just don't think of mixing bar-ware with coffee (except for espresso martinis). Ever since then that is the only way I make iced coffee, no more planning ahead, just iced coffee in seconds! I hope all you iced coffee lovers enjoy this hack as much as I do!

The Mess

This breakfast goodness involves everything you need in the morning: eggs, hash browns, bacon, and cheese.  These breakfast items are all amazing when separate, so when you mix them together it's just  over-the-top deliciousness.  I love this breakfast so much, I think my boyfriend and I make it every weekend. The egg just holds everything together, so trust me that is amazing!

Avocado Lime Tortilla Soup

On cold days sometimes the best remedy is a bowl of hot soup. On really cold days, like today, sometimes the best remedy is a bowl of hot soup with a kick. I want to share my Avocado Lime Tortilla Soup because it's such a flavorful hearty soup but doesn't make you feel sluggish after eating.  I was inspired to create this recipe when I went on a cruise with my boyfriend where they had a "taste bar" and there was a soup similar to this one. Surprisingly he ate it and liked it (he's picky), so my goal was to make a soup similar but sneak some vegetables in it as well.

This soup is very easy to make, only about 10 minutes to prep and about 25 minutes to cook.
